No roast lamb or roast chicken is complete without a side serving of delicious oven roasted potatoes and other healthy meals. While roasting potatoes in the oven seem simple enough, there are certain techniques to take note of if you want to obtain a crispy golden crust while having a moist healthy food, tender and buttery interior.
Ingredients:
2.6 lbs. potatoes (Bintje)
28 tablespoons butter
salt, pepper
Directions:
1. Peel the potatoes before washing them. Pat dry and cut into thin, round slices. Wash these slices again under running water and dry them carefully.
2. Place the clarified butter in a pan and add the well-dried potato slices. Turn a couple of times while cooking. Add salt and pepper.
3. Place some butter on an oven proof serving dish. Place overlapping potato slices on this in a single layer. Put this plate in a 392 degree F. oven for 15 to 20 minutes. Increase the temperature towards the cooking end, to make the potatoes crusty.
4. Once the cooking ends, eliminate the butter that might still remain after the cooking. Serve.
Hi Jill! I just want to thank you for giving me the greatest idea in the world on how to get rid of the potatoes stocked at home before they rot away... Thanks a lot!
