Spicy and Cool Artichoke Soup


Amazing cooking recipes: Turn leftover stew into soup with a chilli kick. Perfect for winter and with other healthy meals

Ingredients:
  • 200g/7oz leftover artichoke and bean stew (from the Herby artichoke casserole recipe)
  • 15g/½oz mint leaves
  • 2 red chillies, roughly chopped
  • 200ml/7fl oz olive oil

Directions:
1. Blend the leftover stew in a food processor. Warm in a pan adding enough water to make it a thickness that is to your liking.
2. Blend the mint with 50ml/2fl oz of oil in a food processor and reserve. Do the same with the chilli and remaining oil.
3. Serve the soup with drizzles of hot chilli oil and cooling mint oil
