Marinated salmon ballotin makes an attractive and delicious hors d’oeuvres for fancy cocktail parties and graceful entrees for formal dinners. Paired with an exquisite bottle of Chablis and other healthy meals, rolled salmon is pure luxury in the mouth.
Ingredients:
2 1/3 lbs. fresh salmon fillet
2 fennels
1 carrot
4 leeks
1 lb. button mushrooms
2/3 lbs. coarse salt
1/3 lb. sugar
1 handful ground pepper and dried fennel
3 ½ tablespoons butter
Directions:
1. Place salmon fillet on a plate. Put the leek green, fennels, and carrots on top. Add some salt, sugar, dry fennel, and pepper. Marinate for 48 hours in the refrigerator.
3. Take the salmon fillet and cut into long slices. Overlap 2 or 3 slices. Place the vegetables on top and roll.
4. Close the ballotin. If desired, use the leek greens to tie the whole together. Decorate with fennel green and olive oil.
