Awesome Healthy meals: Zesty and zingy, chicken with lemon-pepper penne is a refreshing dish that is simple to prepare and takes only a few minutes to cook. You need lemon-pepper penne pasta to make this healthy food, but if you can’t find this flavor in your local grocery, you can use the lemon pepper seasoning that is usually available in the spice rack of most supermarkets. If not, you can easily make your own lemon pepper seasoning for use in this recipe and for other dishes as well. Lemon-pepper seasoning makes a terrific spice rub and marinade for meats whether chicken, beef or fish.
Ingredients:
1 box (8 oz.) lemon-pepper penne pasta
1 cup fresh or frozen baby peas
3 tbsp. olive oil
12 oz. boneless, skinless chicken breast, cut into thin strips
1 medium red onion, cut into wedges
1 tsp. crushed, dried marjoram
2 large cloves garlic, sliced
1 tbsp. lemon juice, preferably fresh
Directions:
1. Prepare pasta according to directions on package. Add peas during the last minute of cooking time. Drain. Toss with 1 tbsp. olive oil and set aside.
2. While pasta is cooking, heat remaining oil over medium heat in a large skillet. Add chicken, onion, marjoram, and garlic. Cook 3-4 minutes, stirring often, until chicken is no longer pink. Stir in lemon juice and cook 1 minute more, scraping pan to scoop up brown bits.
3. Mix chicken and pasta together in a large bowl. Serve hot.
